Rosè Washed Harbison
Jasper Hill Farm Harbison washed with the Boyden Valley Winery La Juju Rosè. Named after their daughters, Juliette (JuJu) and Laurence, this Rosé is crafted from estate grown Frontenac and Cayuga White grapes. Rosé La JuJu is a fun and delicate dry wine, appealing to the palate and to the eye with a soft pink hue. Harbison is a soft-ripened cheese with a rustic, bloomy rind. Young cheeses are wrapped in strips of spruce cambium, the tree's inner bark layer, harvested from the woodlands of Jasper Hill. The spoonable texture begins to develop in the vaults, though the paste continues to soften on the way to market. Harbison is woodsy and sweet, balanced with lemon, mustard, and vegetal flavors. 9oz
