Wine Pick #1:
Vincent Girardin Les Vieilles Vignes Mâcon-Fuissé 2016
Mâconnais, Burgundy, France
Vincent Girardin is a highly regarded Burgundy Domaine. They make a wide range of wines from both Pinot Noir and Chardonnay although the latter predominates. Most holdings span the Côte de Beaune and the Domaine has around 54 acres of vineyards. They also act as a négoce, buying in fruit from growers who can adhere to a certain code of practice, which includes things like avoiding the use of herbicides and insecticides. In the winery, the grapes undergo fermentation using indigenous yeasts, followed by long maturation on the fine lees.

Calabria Three Bridges Durif 2014 
Barossa Valley, South Australia
Three Bridges is part of the Calabria Family Wines portfolio. Calabria Family Wines was founded by Italian immigrants, Domenico Calabria and his son Francesco, in search of a better life. They settled in the Riverina region of Australia, where their family later joined them. Today, the business is run by Francesco’s son Bill and his four children. The family is known for consistent, high-quality wines from several premium wine-growing regions. The name Three Bridges Wine represents a very important part of Calabria family history and also embodies Australian history. The “Three-Way Bridge” structure, which was adjacent to the historic Calabria Winery, was built in the early 1900s and used as an overpass for vehicles and foot traffic. The river which ran under the three-way bridge was used to supply water to the vast agricultural lands of Australia.
CHEESE PAIRING OF THE MONTH:
Boston Post Dairy, Vermont Country Brie
Boston Post Dairy, named after the Old Boston Post Stagecoach road that runs through the farm property, is a family-run farm located in Enosburg Falls, Vermont. The farm is owned and operated by Robert and Gisele Gervais and their four daughters who bought Boston Post Dairy in 2007. Their farm is home to 180 dairy goats and 95 dairy cows. They make a variety of hard and soft Award-winning Goat and Cow milk cheeses all made with pasteurized milk.
This brie makes for a very easy appetizer. Bake it whole and wrapped in phyllo dough, or cut it into pieces and enjoy with baguette slices. It has a very mild and creamy taste which makes it perfect for pairing with sweet and savory toppings.
