Wine Pick #1:
Ellison Estate Vineyard Zora George Rosé 2020
 Grand Isle, Vermont
Kendra and Rob Knapik founded Ellison Estate Vineyard in 2018 when they purchased an abandoned vineyard on a 50-acre farm in Grand Isle, Vermont. With their three young children in tow, the Knapik family lives on the farm during the growing season. Together with a small team, including sheep that are integral to the process, they grow the grapes, make the wine, and run the business. Kendra and Rob are working to restore the land’s health using organic and biodynamic farming practices and have a strong commitment to regenerative agriculture. At harvest, the grapes are processed in the family’s winery in Stowe. Ellison Estate Vineyard wines are designed to achieve the purest expression of the Champlain Islands’ terroir.
Wine Pick #2
Shelburne Vineyard Lake View White 2020
Shelburne, Vermont
About the Producer: Vermont was a lonely landscape for winemaking in 1998 when Ken Albert took the leap from backyard vines to full-time grape grower and winemaker. With no defined pathway to follow, he found his way through trial and error, pouring through libraries of books and attending as many seminars, conferences, and vineyard visits as possible. Sustainable and organic winemaking, by no means a new phenomenon, is the ethos by which Shelburne Vineyard wines are more grown than made. This is in keeping with Ken’s desire to integrate his place in the community as a farmer, business owner, and community servant. Long a champion of the cold-climate hybrid varietals, Shelburne Vineyard has written the early chapters in what promises to be a distinguished history of fine winemaking in the Green Mountains.
CHEESE PAIRING OF THE MONTH:
Vermont Creamery, Bonne Bouche
French for "tasty little bite", Bonne Bouche is the flagship of Vermont Creamery's signature aged goat cheeses. Made with pasteurized goat's milk, the curd is carefully hand-ladled into molds, lightly sprinkled with ash, and aged just long enough to develop that signature wrinkly rind. The finished cheese is creamy with an unctuous texture that melts in the mouth and a flavor that’s light, citrusy, tangy, with hints of earthy mushrooms and a spicy ending.
