Ah, the Naughty Goblin Bubbles! 2018 marked our sixth vintage of this delicious, capricious, zero-zero pét-nat. It's naturally sparkling and quite alive, so it'll need to be completely cold before opening (and do have a glass in hand, ready to pour into when you pop the crown cap).
Unfined & unfiltered. Bottle-conditioned & undisgorged; sediment will settle in the bottle. No SO2 added. 11.2% alcohol by volume.

Cabernet Franc 60%, Cabernet Sauvignon 30%, Pinot Noir 10%
All hand-harvested from a single vineyard in Gualtallary. It shows macerated cherries and crushed mint with undertones of cedar, crushed stone, nutmeg, and ground black pepper. The wine is smooth with almost a grape jelly character tightened up with fresh acid and a bright, vibrant finish.
