Blue Ledge Farm, Middlebury Blue
Established in 2000, Blue Ledge Farms is a first-generation, family-owned and run goat dairy and cheese-making operation. Their mission is to create high-quality products built on the cornerstone of respect for consumers, land, and animals as well as their local community.
Middlebury Blue is a raw cow's milk blue, made with Ayrshire milk from the cows next door. Aged sixty days, it is both creamy and crumbly with a complex flavor.
Blue Ledge Farm calls this cheese 'When Town Meets Gown,' because the flavor profile is Vermont crumbly earthiness mixed with smooth high brow. Blue cheese integrates well with many autumnal flavors. Some dishes include blue cheese buttermilk mashed potatoes, blue cheese cranberry balls, salad with spiced poached pears, blue cheese crumbles, and maple pecans.
