Thyme is the dried leaves and flowering tops of Thymus vulgaris. Thyme is generally grown in the Mediterranean area. The small, curled brownish-green leaves have a warm pungent aroma and flavor that make it great for seasoning stuffing and breading mixtures. A combination of thyme and tarragon can be used as a substitute for rosemary.
