Tasting Profile: From an old South-facing vineyard of the typical aromatic grape Malvasia di Candia, it sees just grapes, love, masterful craft and no trickery such as selected yeasts, filtration, fining or added SO2. It is imbued with primal potency by a long 3 months maceration and then elevage in large wood. Assertive, powerful and deeply evocative: grilled clementine peel, bergamot, cloves honey, thyme and a hint of tobacco and liquorice.
