Tasting Profile: Certified organic, sans-soufre Sparkling. Native ferment in amphora, aged for 1+ year in neutral oak. Ksenija tiraged this at 3 bar of pressure to enhance the vinosity of the base wine, and it was aged for 2.5 years in bottle before disgorgement with 2g of dosage (used aged Ovum Riesling for dosage). Notes of citrus, nectarine, dried floral, ginger and nuttiness ride tight delicate bubbles.
