Tasting profile: Primarily Sauvignon Blanc with 9% Semillon. The juice ferments in stainless steel tanks with frequent lees stirring, and old & new French oak barrels. A perfumed wine with lemon zest, honey dew melon, peach blossom, apple, spearmint, and freshly cut hay. The palate is filled with limeade, lemon meringue, apple, brioche, honey, and chamomile. The wine has good depth, crisp acidity, and chalky minerality.
Food pairing: Mushroom risotto, ravioli, caprese salad, pesto pasta.
