White peppercorns come from the same plant as green and black peppercorns. To produce white peppercorns, pepper berries have been allowed to mature and then have their outer skin removed. White pepper has an earthy, almost musty, taste. It is the main flavor component of hot & sour soup and is commonly used in soups, sauces, and potato dishes.
