Tasting Profile: Sisters Adele and Elsa Matrot were at the helm for this, their first, vintage carrying on the venerable traditions of the Domaine with an eye towards innovation in a rapidly changing climate. Sourcing 30+ year old vines set on steep, marly limestone hills, they employ natural yeasts and aging in French oak but utilize steel tanks prior to bottling, all in service to what makes this southernmost corner of Beaune home to some of Burgundy’s overlooked gems. Red fruited, a bit earthy, a touch of pepper and lively acidity highlight this classic Old World pinot.
