Tasting Profile: Alain Carrère founded Domaine de Majas with his wife Agnès in 1992. Today, the estate comprises 75 acres, all in the commune of Caudiès-de-Fenouillèdes.  Since 2007 the couple has worked in partnership with noted biodynamic producer Tom Lubbe, the owner/winemaker of Domaine Matassa in Rousillon, and all 75 acres of the estate are now farmed organically. His unusual white blend brings together Macabeu, Rolle, and Carignane Blanc. Fermented and aged in concrete and on the lees, this is a medium-bodied, lively white with notes of peach, a floral kick, and a long mineral finish. 

Food Pairing: Appetizers, crab cakes, white fish, ceviche, pasta with pesto, salads and roasted vegetables.
