Tasting Profile: This wine is made in the appassimento method in which grapes from 2012, 2013 and 2014 were dried in the dark with fans for 10-14 days followed by whole-cluster fermentation and then added to a solera, topped off each year until bottling in 2015. The result is a hedonistic yet elegant blend of plummy and raisin-y dried fruits and a surprising amount of acidity to forestall unwanted heaviness.
