Unfined. Unfiltered. Spontaneously Fermented.

Following destemming and a gentle crushing, the grapes for this wine went into a stainless steel tank to ferment. Pressing was performed after an eighty-four day maceration on skins. About eighty percent of the wine was sent to neutral oak to age sur lie with weekly battonage for three and a half months and the other fifth was aged in stainless steel. After seven months, the lots were blended and allowed to come together prior to bottling.

The aromas are intriguing and complex, with subtle notes of apricot marmalade, orange peels, raisins, white pepper, tea, and floral attributes, I could not stop smelling this wine! This vintage is medium-bodied and well textured with a sense of weightiness.

On the palate, Tectonic is well-balanced with modest tannins and edgy acidity, with a bitterness reminiscent of tea and thick-skinned tropical fruits. If you were curious from the nose, you will be hooked by the lingering finish and asking for another glass. I enjoyed mine with Jasper Hill Harbison, there is something about the bloomy rind cheese that plays into the marmalade attributes of the Tectonic wine.
