Harvested from 80-year-old organic Verdejo vines planted in clay-calcareous soils. Fermented in stainless steel on the lees for 3 months. A straw yellow color with aromas of white fruit, dill, fennel, and freshly cut grass. The palate is dry and smooth with lively acidity. Flavors of lemon, herb, fennel, and grass.
