Made with grapes cultivated according to biodynamic farming practices and fermented with wild yeasts, it's a fascinating expression of Prosecco. The outcome produces a lively straw yellow in color with an excellent mousse. Yeasty aromas of bread dough, toasted hazelnut, pressed wildflower and an earthy whiff of brimstone follow over to the medium-bodied and lively palate. The residual yeast present in the bottle gives up a soft and balanced acidity. A Prosecco of great personality that would pair excellently with seared scallops, smoked eel, or a slice of Italian Panettone.
