As to be expected with a Melon de Bourgogne, this wine is briny, crisp, and clean. A style that is so simple, easy, and plentiful in France that many pass it up. So we were excited to find this unfined one with texture and soul. Extended time on the lees adds subtlety, complexity, and a touch of sparkle to the wine along with bright fruit (nectarine, zesty green apple!) and crisp acidity. It would pair beautifully with oysters on the half shell, but it also goes well with hard-to-pair veggies - we love it with roasted artichokes!
