Wine Pick #1:
Edmunds St. John Heart of Gold 2018
El Dorado County, California, USA
Californian wines had developed a monolithic reputation as Big, Bold Blockbuster Cabs, or Chards when Steve Edmunds began a journey to discover what the state's myriad climatic regions were capable of producing. His passion was directed to the grapes and wines of the Rhône Valley in the south of France and how these might translate to the New World. This Heart of Gold represents both the 11th vintage of the wine and his 47th year in the trade. Reverence is something very few winemakers achieve, but ask any current or former vintner to list their top ten vignerons in all the world and Mr. Edmunds' name will surely be found. Maddeningly modest, he attributes his success to luck and intuition. We should all be so intuitively fortuitous.

Melville Estate Syrah 2016
 Santa Rita Hills, Santa Ynez Valley, California, USA
After great success growing sought-after grapes in Sonoma County's Knights Valley, Ron Melville Pursued his dream of growing the best cold-climate Pinot Noir, Chardonnay, and Syrah in the Santa Ynez Valley.  In fact, he and his sons were instrumental in the creation of the Santa Rita Hills AVA, which was granted in 2001.  Melville's wines reflect the estate's unique climate with its proximity to the ocean, morning/evening fog, and steady afternoon winds.  Add abundant sunshine and soils rich in calcareous rock and sand which contribute natural acidity and flavor balance to his wines.  His Syrah is always among the most regarded and sought after in both California and the world.  This is one of our Cellar Clubs' most impressive wines to date.  Please enjoy and tell a friend where you got it!

CHEESE PAIRING OF THE MONTH:
Shelburne Farms 2 Year Extra Sharp Cheddar
Since 1980, Shelburne Farms has made an artisanal, Vermont cheddar, using only the raw milk from our pasture-raised herd of Brown Swiss cows. Shelburne Farms cheese is made entirely by hand and emphasizes quality, not quantity. They produce the highest quality dairy product with no artificial flavorings, colorings, or preservatives. Their cheddars have consistently won awards for excellence from the American Cheese Society.
Shelburne Farms Extra Sharp Cheddar is aged for a minimum of 2 years and has the classic Vermont cheddar profile...acid forward sharpness, some minerality, and sweetness on the back end. Great to snack on, but pairs especially well with dry ciders, Vermont maple syrup, and patés. All of which provide an excellent complement to this Vermont staple!
