Wine Pick #1:
Bodegas Ostatu Rioja Blanco 2021
Samaniego, Spain
 Bodegas Ostatu is a family winery located in the heart of the Basque Rioja Alavesa region in the village of Samaniego. The Sáenz de Samaniego family has been farming in the area since the 16th century – for so many generations, in fact, that their family name and the village’s name are the same. The winery has been growing grapes for over two hundred and fifty years. Today, all of the vines on the estate are certified organic and the winery is carbon-neutral through its use of green energy sources and participation in reforestation initiatives.

Easton Amador County Zinfandel 2016
Amador County, California
Bill Easton is a fine-wine pioneer, having championed Zinfandel ahead of its golden age and put Amador County on the map. In the 1980s, two decades before California’s top winemakers started flocking to this under-the-radar region for its ideal climate and undervalued land, Bill was there, quietly making robust Zinfandels. Overseeing two labels, Bill is known for both Terre Rouge & Easton Wines. Terre Rouge concentrates on Rhône varietals in California while the Easton portfolio features single vineyard Old Vine Zinfandel, Barbera, Cabernet Sauvignon, and Sauvignon Blanc.
CHEESE PAIRING OF THE MONTH:
Pasamontes 3-Month Manchego
Pasamontes has been making cheese since 1896 and has long been known as Spain’s best Manchego. More than a century after Pasamontes’ beginning, María Dolores continues to craft Pasamontes Manchego at the same location her great-grandmother got started. Pasamontes’ milk is sourced from five local herds all within a 20-kilometer radius of the Pasamontes farm.
Their young award-winning Manchego is aged for only 3 months but is full of nutty, zesty, and grassy-tasting notes. With only 3 months of aging, the texture is firm but not dry. It's actually quite creamy with a mild aftertaste making it perfect for melting or snacking. Manchego is classically paired with quince paste but can also be shaved over salads or potato dishes!
