Welcome to Vin Sauvage Month!
 We are spending the month of March celebrating the wonderful natural wine producers from around the world.
This month's selection features two special wineries that focus on keeping their wine "Sauvage". Whether they grow organically, practice sustainability, or follow a biodynamic process, we are loving this lineup!
Wine Pick #1:
Gramona Gessamí 2021
Sant Sadurní d’Anoia, Pendès, Spain
Gramona, based in the village of Sant Sadurní d’Anoia in the heart of the Penedés, is a dynasty of vine-growers. Behind the identity of Gramona stands a long family venture of more than 125 years, producing some of the finest Cavas in the region. The fifth generation of Gramona has also started making still wines that aim to express the character of the local terroir and delight lovers of good wine. True to their belief in respecting the environment, they manage the vineyards according to organic and biodynamic principles.

Domaine Benjamin Taillandier Laguzelle 2019
Caunes-Minervois, France
After finishing winemaking school, Benjamin Taillandier originally chose to work in a conventional winery. In 2004, however, he met natural winemaker Jean-Baptiste Senat and began working with him in his cellar. He was influenced by Senat’s ideas and techniques. After his time with Senat ended, he knew that he wanted to make his wine with a similar philosophy. In 2007, he settled in his family’s hometown of Caunes-Minervois. He purchased 5.7 hectares of Grenache Noir, Syrah, Cinsault, Terret Gris and began working it organically, eventually converting all of it over to biodynamics. Each year he added a plot to his estate and now he works 9.5 hectares all by hand and is now fully Eco-cert certified.
CHEESE PAIRING OF THE MONTH:
Stony Pond Swallow Tail Tomme
Stony Pond cheese is all made in small batches with milk from their own cows. They began making cheese in the summer of 2019 with the debut of their Swallow Tail Tomme. Swallow Tail Tomme is an aged, raw-milk cheese. The cheese is cave-aged for at least 60 days until it emerges with a delicious, fresh taste, ready for your cheeseboard. It pairs well with asparagus, salami, and dry white wines!
