FEBRUARY 2022
CELLAR CLUB
Join us as we celebrate our favorite month of the year, Fondue February!
The warm, melted goodness that is fondue brings comfort to the cold and snowy month ahead of us. Beyond being downright delicious, the joys of fondue are only increased after a cold & snowy winter day. This month we have selected two wines that will pair wonderfully with fondue. So gather around the table and enjoy Fondue February!
Wine Pick #1:
Beaumont Family Wines Chenin Blanc 2020
Cape South Coast, South Africa
Beaumont is a charming family-run farm and winery situated in the quaint Overberg Village of Bot River. The farm is home to the region’s oldest wine cellar and is steeped in history dating back to the 1700s. Beaumont estate was born in 1994 when Jayne and her late husband Raoul left the local cooperative system to strike out on their own. They renovated the property at Companies Drift which had formerly been an 18th-century outpost for the Dutch East India Company. In 2004, Sebastian Beaumont, having honed his skills working in the vineyards took over the reins in the cellar and has continued to build the Beaumont reputation.
Wine Pick #2
Tenuta La Pergola Monferrato Rosso 2019
Monferrato, Piedmont, Italy
The story of this cuvée began in a simple trattoria. Dixon and Kermit Lynch were on their way to Alba when they stopped for lunch. They were served a pitcher of Arneis that pleasantly surprised them and they asked for the address of the producer. When they visited, they tasted several cuvées of Monferrato Rosso. It has quickly become a staff favorite, not only for its smooth earthiness and genuine regional typicity but also for its versatility in pairing with a wide variety of dishes.
CHEESE PAIRING OF THE MONTH:
Old Quebec, 7-Year Aged Cheddar
Aged for 7 years, instead of the traditional 1.5 to 2 year standard for sharp cheddar, this cheese is distinctively robust and offers truly a one-of-a-kind taste with notes of butterscotch and an assertive tang. It features a semi-hard, slightly crumbly consistency due to the low moisture level needed for its long aging process. Extremely versatile in its application, it can be cut into cubes, grated, or sliced thin for sandwiches. It also melts well, allowing you to create a variety of unique culinary creations!
