Lemon Fair Honeyworks Large Raw Honey Comb
Lemon Fair Honeyworks, located in Cornwall, VT, gets its name from the Lemon Fair River which flows behind the valley of their honey house. Their company gravitates towards the theory of the Lemon Fair River being anglicized from the French phrase “Le Mont Fair,” which means “of the mountains.” We cannot help but agree that this is not far off, since Vermont is indeed surrounded by mountains. Lemon Fair produces raw comb honey from bees never treated with miticides, antibiotics, or other medications.

Combine 1 cup of ice, 1 shot of dry gin, 1 shot of fresh lemon juice, and 1 shot of simple syrup in a cocktail shaker and shake well!
Serve in fluted Champagne glass, pour over 2-3 oz of your favorite sparkling wine
Garnish on the rim with a chunk of Lemon Fair raw comb honey and fresh lemon peel.
