Danesland Danish Blue
Danish Blue is a semi-soft, creamy cheese made from cow's milk. Compared to the powerful flavor of Roquefort, this is considered a mild blue cheese. The needling process takes place in the curd phase, and
Penicillium Roqueforti is inserted evenly into the deep channels. Traditionally, the cheese is aged in a cave or another dark, damp environment for 8 to 12 weeks. This is a great cheese for crumbling over salad or atop a freshly grilled burger!

Doux De Montagne
Ripened in the age old tradition, Doux de Montagne originates from the Monts du Velay region of France. Its name, word by word, means "soft" or "smooth (doux)" and mountain (montagne). It is a delightful cheese, and matches well with ales, light sparkling wines, and champagne. Try it sliced on a sandwich, or as part of a cheese platter. It's also great as a snack before or after dinner.

Emmi Appenzeller
Using a closely guarded recipe that dates back 700 years, 60 village dairies produce this delicacy in Appenzellerland in the Swiss mountains. While the recipe is known to few, we do know that while the cheese is aging, cheesemakers was the Appenzeller with herbal brine consisting of wine and cider, adding complexity. Appenzeller is noted for its nutty flavor and herbal spiciness. A great melting cheese and delicious in a vegetable frittata!
