Vermont Shepherd (once known as Major Farm) is one of the oldest sheep farms in Vermont and is the oldest sheep dairy farm in the United States. At the northern edge of the farm is a Cave that is home to their 2 types of cheese, Invierno and Verano. All of their cheeses are aged on wooden boards, an age-old method that helps in the development of natural cheese rinds.
Vermont Shepherd cheeses are seasonal. Invierno (or “winter” in Spanish), made from sheep and cow's milk, is a soft to semi-hard natural rind cheese aged 5-6 months. This is a versatile cheese with a rich, butter and mushroom flavor. Pair this seasonal cheese with crisp ciders, robust porters, or savory red wine!
