Taleggio
The softest, creamiest member of the famous Italian Stracchino cheeses, Taleggio was first made in the valley of the same name, located in the historic province of Bergamo. Taleggio made its debut in the international cheese markets after World War I. Created with a washed rind cow's milk, this cheese is spreadable but not quite oozy. The meaty and fruity notes present in Taleggio stand up well to bold red wines like Sangiovese but it is also great melted into polenta, or just served with crusty bread.
