Blue Ledge Farm, Riley's 2X4
Blue Ledge Farm started when Hannah and Greg met in Florence Italy while studying. Not long after in 2000 they began the immense undertaking of converting a cow barn into a production goat facility. Today they milk over 100 goats and produce 11 different cheeses. Riley's 2X4 is a raw goat and cow milk mixture, with a natural rind and and firm paste. Aged for over 3 months, Riley's 2X4 has nutty and tangy notes, making it the perfect pair for a rich dark beer! Why is it called Riley's 2X4 you ask? According to Hannah and Greg "this cheese is sturdy and non-pretentious like the lumber".
