Cobb Hill, Four Corners
Established in 1997, Cobb Hill is the combination of two older dairy farms located in Hartland, Vermont, that have merged to create a beautiful, 260-acre cooperative dairy, farm and community of families. After building a small cheesemaking facility on the property in 2000, the community has developed two cheeses, one of which is Four Corners. Based on a Welsh Caerphilly Cheddar, this wonderful treat is aged 4-6 months and has a buttery and tangy flavors. This cheese will melt in your mouth and is a great cheese for a traditional ploughman's lunch under a shady tree!
