Boston Post Dairy Gisele
Boston Post Dairy, named after the Old Boston Post Stagecoach road that runs through the farm property, is a family-run farm located in Enosburg Falls, Vermont. The farm is owned and operated by Robert and Gisele Gervais and their four daughters who bought Boston Post Dairy in 2007. Their farm is home to 180 dairy goats and 95 dairy cows. They make a variety of hard and soft Award-winning Goat and Cow milk cheeses all made with pasteurized milk.
Gisele, which is named after co-owner Gisele
Gervais, is made with a blend of pasteurized cow & goat's milk and aged a minimum of 3 months. It is an Alpine-style semi-hard cheese that is finished with a spiced apple cider wash. This cheese exudes a faintly spicy, floral and cinnamon smell with notes of cooked onions. The texture is creamy, thick and pliable, and flavors build slowly on the palate as a sharpness hits the sides of the tongue. Pairs well with sparkling wine, Merlot, pears or grapes.
