Vermont Farmstead Maple Sriracha consists of a WindsorDale base, a raw whole milk cheese made from their own herd of cow's milk. They based their WindsorDale recipe on Yorkshire, England's famous Wensleydale cheese. They imported a European peg mill that tears the curds versus cutting, and then press the curds into tall, cylindrical traditional truckle moulds which set this cheese board star apart in both texture and flavor.
Teamed up, these 2 Vermont companies have created a cheese with some heat yet retaining flavor. The honeyed, buttery flavor of WindsorDale acts as the perfect vehicle to the incredible flavor of this Sriracha. Brighten up your cheese board, melt onto your favorite breakfast foods, scrambled eggs, grits, toast,etc. or add some extra pop to your mac 'n' cheese.
