Blue Ledge Farm
Established in 2000, Blue Ledge Farm is a first generation, family owned and run goat dairy and cheese-making operation. Their mission is to create high quality products built on the cornerstone of respect for consumers, land and animals as well as their local community.
Middlebury Blue is a raw cow's milk blue, made with Ayrshire milk from the cows next door. Aged sixty days, it is both creamy and crumbly with a complex flavor. It has a good balance of salty and sweet, a little bit sour, with barnyard, caramel and wet hay notes near the rind contrasting nicely with the milky, creamy interior. Winner of Yankee Magazine's "Editor's Choice Award" November 2013 this blue pairs wonderfully with a sweet Reisling, buttery Chardonnay or a hoppy IPA.
