THE BIG CHEESE
OUR VT CHEESE SPECIAL OF THE WEEK!
Vermont Shepherd, Verano
Vermont Shepherd is a 250-acre farm in Westminster, Vermont that is owned and operated by the Major and Ielpi family, with active shepherds currently ranging in age from 7 to 53. Vermont Shepherd (once known as Major Farm) is one of the oldest sheep farms in Vermont and is the oldest sheep dairy farm in the United States. At the northern edge of the farm is a Cave which is home to their 2 types of cheese, Invierno and Verano. All of their cheeses are aged on wooden boards, an age-old method that helps in the development of natural cheese rinds.
Vermont Shepherd cheeses are seasonal. In the warm months, Vermont Shepherd sends its ewes to graze pastures of clover and wild herbs. Verano has a golden brown rind and a smooth, firm, ivory-colored paste. Flavors are deliciously rustic and sweet, underpinned by notes of caramel, earth, and hay-pleasingly full-flavored and profound, but not overwhelming. The cheese is aromatic and herbaceous, like mint and thyme. Pairs wonderfully with your favorite bold red wine! REG $30.99/LB
