This is a limited edition Ukraine tribute Alp Blossom! Cheesemaker Hofkaserei Kraus is donating two euros per kilogram sold to Jose Andres' NGO World Central Kitchen which is currently serving 1 million meals each day in Ukraine. This raw cow's milk cheese showcases the beauty and diversity of the “hay belt” in Western Austria, Southern Germany, and Eastern Switzerland. Although produced and initially aged for six months at Sennerei Huban in Austria, Alp Blossom is then transported to a cave at Kaeskuche in Bavaria, where the dried edible flowers and herbs are added to the rind. The rind is packed with wildflowers local to this area. Rich, floral, buttery, and semi-sharp. This cheese is a delightful, colorful addition to any cheese board.
