This cave-aged cheddar is cut from a 40 lb block after aging for roughly 12 months underground. Developing cheeses are constantly brushed, turned and monitored for quality as a buff, natural rind develops. Batches are released for sale once the perfect balance of flavor is achieved- bright and brothy savory notes with a salt-caramel finish and supple, crystalline texture.
The cheese's complexity and savory-sweet balance makes a perfect match for charcuterie, apple jelly, or a rich chestnut honey. Pair with an off-dry sparkling apple cider, malty brown ale or an oaked Cabernet Sauvignon.
