THE BIG CHEESE
OUR VERMONT CHEESE SPECIAL OF THE WEEK
Fromagerie du Presbytere Le Louis d'Or
Founded in 2006, Fromagerie du Presbytere is named after their presbytery that dates back to 1936, located across from Ferme Louis d'Or farmstead. The fourth Morin generation in agriculture, extensive renovations were undertaken in 2005 by the brothers to create their cheese-making facility. Artisan cheese production began the following year.
Milk destined for cheese-making is collected from their 140 Holstein and Jersey cows. Hormone and antibiotic free, fed on dry hay and pastured, Fromagerie du Presbytere's herd enjoys nothing but the best.In 2015, the Morin family acquired the church adjacent to the presbytery and transformed it into an affinage facility. A fifth generation Morin sons now works alongside cheese-maker Jean on the farmstead.
Le Louis d'Or presents a firm brown rind and a smooth, supple beige interior. Mild scent of butter and hazelnut, with pleasant earthiness. Richly nuanced, its flavor brings to mind creamery butter and toasted nuts, with a subtle fruitiness.
