Orb Weaver Farm, Cave Aged Orb Weaver
Located on 100 acres in the Champlain Valley, Marjorie Susman and Marian Pollack have been hand crafting their famous farmhouse cheese since 1982. Using milk exclusively from their herd of Jersey cows they create a rich, raw milk cheese with a slight tang. The process does not end here, the wheels are then placed into the limestone cheese cave and carefully turned and scrubbed over the next few months. The final product is a firm yet crumbly cheese with nutty notes and a grassy nose. This versatile cheese is wonderful eaten on its own or melted into a flavorful mashed cauliflower.
