English Shropshire Blue
English Shropshire Blue is a semi-firm blue cheese described as a cross between Stilton and Cheshire. Full-flavored and unpressed, this bright orange cheese has a surprisingly smooth texture. A golden, russet rind forms after each cheese is made, creating a sharp, tangy cheese that stands out among fellow blues. A peppery Pinot Noir balances out the robust flavor of this cheese lingering on the palate.
Cahill Cheddar with Porter
Marion Cahill made Irish Plain Porter Cheese from pasteurized cow's milk and Guinness-brewer Porter since 1759. It is blended to create a visually dramatic mosaic pattern which is the most attractive part of the cheese other than its flavor. The flavors of this brown waxed gourmet cheese are full, rich, tangy, and chocolaty with a pungent finish. It goes perfectly as the Hors D’Oeuvre when sliced and served with salad. This cheese can also be served grilled. Pair Irish Porter with a chilled pint of Guinness stout or Irish porter.
Made with pasteurized cow's milk, Leyden has a firm composition. The addition of cumin seeds (responsible for the tangy flavor and spicy aroma) distinguishes it from other Dutch cheeses. Leyden is a wonderful snacking cheese and makes a beautiful and bold addition to any cheese platter. Accompany it with dark malty bread or an ice-cold beer for a wonderful combination.
