This cheese is made with the real deal: truffles. No artificial flavoring or fillers, such as mushrooms, are used in the production. This dedication to craft results in a more subtle truffle taste than that from a cheese artificially flavored with truffles. Great as an addition to a cheese board, or jazzing up Mac & Cheese!
Made with pasteurized cow’s milk, Leyden has a firm composition. The addition of cumin seeds (responsible for its tangy flavor and spicy aroma) distinguishes it from other Dutch cheeses. Leyden is a wonderful snacking cheese and makes a beautiful and bold addition to any cheese platter. Accompany it with dark malty bread or an ice-cold beer for a wonderful combination. An alternative pairing is a bold red wine like a Shiraz.
Jasper Hill Cabot Clothbound ~5-7oz
Jasper Hill works with Cabot graders to hand-select vats of young cheese that are suited to graceful cave-ripening. Upon arrival to temperature and humidity controlled cave within The Cellars, blocks are coated with lard, brushed, and turned to cultivate a living natural rind. These traditional methods impart unique complexity to the developing cheese. Batches are released for shipping when the perfect balance of texture and flavor is achieved; bright and deeply brothy with a salt-caramel finish and supple, crystalline texture. The sweet-savory balance of the cheese makes it an excellent match with charcuterie, apple preserves, or rich chestnut honey. Pair with an off-dry sparkling cider, malty brown ale, or an oaked Cabernet Sauvignon.
