Consider Bardwell Farm, Danby
Founded in 1864 by Consider Stebbins Bardwell, Consider Bardwell was the first cheese-making co-op in the state of Vermont! Revitalizing the traditions are Angela Miller and Russel Glover. The goat's milk used in their cheese is from their herd of Oberhaslis goats. Danby is a hard, extra-aged, raw goat milk cheese, inspired by one of Italy's most famous exports- Asiago. These large wheels are aged a minimum of six months. Named after the pure white marble of Danby, VT, this cheese is ideal for grating over pasta or as a nice sharp snack. The Danby is a seasonal cheese, so this is a real treat!
