Sheep's Milk Cheddar
Made from 100% Sheep's milk, this aged cheddar is sharp and contains those sought after tyrosine clusters (signs of a well-aged cheese). This sheep cheese is very approachable, with an undercurrent of sweetness and butterscotch notes, reminiscent of an aged Gouda. This cheddar is a star on a cheeseboard, but also melts wonderfully over nachos or in your favorite mac & cheese.
Chaumes is a round, soft-ripened cheese with a bright orange washed rind and an ivory paste. Chaumes is distinguished by a soft, springy texture with a rich, creamy paste and a hazelnut aftertaste. An excellent table cheese, it also melts well for a nice addition to any recipe. Serve Chaumes on a cheese platter with Camembert and Blue Stilton or with Brie and Roquefort.
