Cave Aged Blue Cheese
This complex, semi-firm Cave Aged Blue Cheese is extremely versatile. A premium cheese with deep bluish-green veins and strong, savory flavor, it is wonderful served cold, crumbled atop a salad or with sliced fruit. To really allow the rich flavors and creamy texture to shine, bring it to room temperature - it's delicious with crackers or melted over a steak or burger. And, of course, its bold flavors mingle beautifully with robust red wines like Cabernet Sauvignon.

JuraFlore Fort des Rousses, Comté 7oz
Comte is a cheese which is cherished by the French and was the first cheese to receive AOC protection status. Comté is traditionally produced in the cool mountain reaches of Jura, where local farmers bring their Alpine milk to local cooperatives.
At Fort des Rousses, all of their cheeses benefit from the special maturing techniques, giving them a nice creamy texture and a strong and refined combination of aromas that linger in the mouth. Patiently matured for a minimum of 12 months, Juraflore Fort des Rousses Comté cheese bursts with the flavors of the mountains where it is produced. Enjoy its powerful fruity, roasted flavors: the taste of toasted almonds, melted butter, spices and citrus fruits.

Using a closely guarded recipe that dates back 700 years, 60 village dairies produce this delicacy in Appenzellerland in the Swiss mountains. While the recipe is known to few, we do know that while the cheese is aging, cheese makers wash the Appenzeller with a herbal brine consisting of wine and cider, adding complexity. Appenzeller is noted for its nutty flavor and herbal spiciness. A great melting cheese making it a must addition to your winter fondue recipe!
